This is the bowl to make when you want lunch to feel put-together without actually cooking anything. Canned tuna and leftover rice do most of the work, and a spoonful of cottage cheese whisked with lemon and mustard stands in for a heavier dressing.

Fifteen minutes, one bowl, and a lunch that actually keeps you full until dinner.

Ingredients

  • 95g tuna in springwater
  • 3/4 cup cooked rice
  • 1 packed cup baby spinach
  • 1/2 cup cucumber
  • 1/2 cup cherry tomatoes
  • 1/4 avocado
  • 1/4 cup cottage cheese
  • 1 tsp extra virgin olive oil
  • 1/2 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1/2 tsp apple cider vinegar
  • 1 tbsp pumpkin seeds
  • Pinch sea salt
  • Cracked black pepper
  • Extra lemon wedge
  • Fresh parsley or chives

Directions

  1. Warm 3/4 cup cooked rice according to packet instructions if using microwave rice. Season with a small pinch of salt and a squeeze of lemon juice.
  2. Drain the tuna very well so the bowl doesn't become watery.
  3. In a small bowl, stir together the cottage cheese, olive oil, lemon juice, apple cider vinegar, Dijon mustard, a pinch of sea salt and cracked black pepper until creamy. For a smoother dressing, mash the cottage cheese with the back of a spoon.
  4. Place the baby spinach in the base of a serving bowl.
  5. Add the warm rice, the drained tuna, diced cucumber, halved cherry tomatoes and diced avocado.
  6. Spoon over the lemon cottage cheese dressing.
  7. Finish with pumpkin seeds, fresh parsley or chives if using, extra cracked black pepper and a squeeze of the extra lemon wedge.
Fabulous Tip

Make the dressing the night before. It keeps well in the fridge and saves you a step when lunchtime rolls around.
