These come together in a food processor with no oven involved. Dates and oats form the base, matcha gives them an earthy, slightly grassy flavor, and a roll in shredded coconut makes them look a lot more polished than the five minutes of effort they actually took.

Make a batch on a Sunday and you've got a grab-and-go snack in the fridge for the rest of the week.

Ingredients

  • 10 pieces Medjool dates (1 cup, pitted and soaked in hot water for 10 minutes)
  • 1 cup oats
  • 1 serving vanilla protein powder
  • 1 tbsp matcha powder
  • 1/2 cup almond butter
  • 2 tbsp hemp seeds
  • 1 tsp cinnamon
  • 2 tbsp unsweetened shredded coconut

Directions

  1. In a food processor, blend the soaked dates until they form a smooth paste, scraping down the sides of the blender if needed. Add the oats and process until finely chopped. Add the protein powder, matcha powder, almond butter, hemp seeds and cinnamon.
  2. Process until the mixture comes together in a sticky dough. Roll the mixture into small balls, about 1 inch in diameter. Wet hands slightly to roll into the shredded coconut. Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator.
Fabulous Tip

If the mixture feels too sticky to roll, wet your hands with a little water between balls. It keeps the dough from sticking to your palms.
