This is dinner-party salad energy on a Tuesday night timeline. The salmon roasts while you chop everything else, a simple lemon Dijon dressing pulls it all together, and feta and olives give it that Mediterranean feel without any complicated technique.

Thirty minutes start to finish, and it eats like something you'd order out.

Ingredients

  • 2 pieces salmon, 4 oz (115g) each
  • 2 tsp lemon juice
  • 5 oz (150g) iceberg lettuce, chopped
  • 5.6 oz (160g) couscous, cooked
  • 1/2 red onion, chopped
  • 10 cherry tomatoes, chopped
  • 2 tbsp feta cheese
  • 1 tbsp olive oil, for dressing
  • 1 tbsp fresh lemon juice, for dressing
  • 1/2 tsp Dijon mustard, for dressing
  • 1/2 tsp maple syrup or honey, for dressing (optional)

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Rub salmon with olive oil and season with salt and pepper. Place skin-side down on a baking tray and drizzle with lemon juice. Roast for 10 to 12 minutes or until fully cooked.
  3. Whisk together the dressing ingredients, including maple syrup if using. Add a pinch of salt and pepper to taste.
  4. Assemble the salad by dividing chopped lettuce into bowls, then topping with cooked couscous, red onion, tomatoes, and feta cheese.
  5. Once the salmon is done, place it on the salad. Drizzle the dressing over the salads and serve immediately.
Fabulous Tip

Cook the couscous while the salmon roasts. Everything finishes within a couple of minutes of each other, so nothing sits around getting cold.
