Step-by-Step Recipe for Mexican Black Beans Wrap

    Meatball Spaghetti Squash Recipe

    Ingredients

    • 454 grams Extra Lean Ground Beef
    • 1/2 Yellow Onion (small, finely diced)
    • 1 Garlic clove, minced
    • 1 tsp Dried Basil
    • 1 tsp Dried Thyme
    • 1/4 tsp Sea Salt
    • 2 Spaghetti Squash (medium, halved lengthwise, seeds removed)
    • 1/2 cup Tomato Sauce

    Directions

    • Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper for easy cleanup.

    • Prepare the Meatballs: In a mixing bowl, combine the extra lean ground beef, finely diced yellow onion, minced garlic, dried basil, dried thyme, and sea salt. Mix well until all the ingredients are evenly distributed. Shape the mixture into meatballs of your desired size and place them on one of the prepared baking sheets.

    • Roast the Spaghetti Squash: On the other baking sheet, place the halved spaghetti squash flesh-side down. Roast in the preheated oven for about 30 to 35 minutes, or until the squash is fork-tender. This process allows the natural sugars in the squash to caramelize, enhancing its sweetness and flavor.

    • Bake the Meatballs: While the spaghetti squash is roasting, bake the meatballs in the oven for 15 to 20 minutes, or until they are cooked through and golden brown on the outside. Cooking the meatballs separately ensures that they retain their shape and flavor without getting soggy from the squash’s moisture.

    • Warm the Tomato Sauce: In a saucepan, warm up the tomato sauce over low to medium heat. You can customize the sauce with additional herbs and spices to suit your taste preferences.

    • Shred the Spaghetti Squash: Once the spaghetti squash is cool enough to handle, use a fork to gently scrape the flesh into strands, resembling spaghetti noodles. This step is where the magic happens, transforming humble squash into a low-carb alternative to pasta.

    • Assemble and Serve: Arrange a generous portion of shredded spaghetti squash on each plate, top with meatballs, and drizzle with warm tomato sauce. Garnish with fresh basil leaves, grated parmesan cheese, or nutritional yeast for an extra burst of flavor and visual appeal.

    Leftovers

Any leftovers can be stored in an airtight container in the refrigerator for up to three days. Simply reheat in the microwave or oven for a quick and satisfying meal.

    Serving Size

One serving typically includes three to four meatballs and half of a spaghetti squash, providing a hearty and nutritious meal that’s perfect for lunch or dinner.

    More Flavor

Feel free to customize the meatball mixture with additional herbs and spices, such as dried oregano, rosemary, or parsley. For added moisture and binding, you can add ingredients like Worcestershire sauce, breadcrumbs, or eggs.

Experiment with different types of sauces, such as marinara or spaghetti sauce, to elevate the flavor profile of the dish even further.

    Additional Toppings

For the ultimate finishing touch, garnish your meatball spaghetti squash with fresh basil leaves, grated parmesan cheese, or nutritional yeast.

These toppings not only add a pop of color but also enhance the taste and texture of the dish, taking it to the next level of culinary delight.

    Save Time

Short on time? You can streamline the cooking process by using store-bought frozen meatballs instead of making them from scratch.

This convenient shortcut allows you to enjoy the same delicious flavors with minimal effort, making it perfect for busy weeknights or last-minute meals.

    Food and Drink Pairings

Wondering what to serve alongside this delectable dish? Here are a few pairing suggestions to complement the flavors of Meatball Spaghetti Squash:

    • Side Salad: A crisp, refreshing salad with a tangy vinaigrette provides a lovely contrast to the richness of the meatballs and squash.

    • Garlic Bread: Indulge your carb cravings with a slice of warm, garlic-infused bread for a comforting accompaniment.

    • Chianti Wine: The fruity notes of Chianti wine pair beautifully with the savory flavors of the meatballs and tomato sauce, enhancing the dining experience.

I would like to thank you on behalf of all your Fabulous50s followers we truly love you and what you’ve created for women. We love your style and elegance and each of us feel it’s as if you’re in the room with us. I gathered a few of our sentiments. Please keep up your amazing work and contributions to women over 50, 60, 70 and 80. Wow ladies! I am so impressed with the number of you who took part in Schellea's 28 day challenge. Some of you are new to Fabulous50s and others like myself have been around for awhile. I did the daily challenge and added it to my regular workouts each day (some YouTube, some VitaliT) and loved the response Schellea got from everyone. So Bravo to all!☺️💪 Day 27 done ✅ I can say my balance is really improving! ♥️ Thanks for letting me join, I stumbled across the fabulous 50s workout today and really enjoyed it 🙌 so thought I’d ask to join the group. Day 26, last strength workout of the challenges. So bittersweet😉. I did the 28 days intermediate workout simultaneously. And what worked for me is that they both had the same schedule. Now there are 2 more days of stretching and restoring to come and then we are ready for a new challenge. And for those who joined later, just enjoy this challenge a little longer. You are amazing. I’m going to miss this challenge. We really made Schellea proud. I know she will keep challenging us. It’s her nature/nuture. I can’t wait to see our final numbers. Day 25 ✔️ out of breath and perspiring, but overall I am feeling great, and nearing the end of the challenge, and showing up for myself,l know I will keep on challenging myself, and last but not least, I would like to thank Schella and the team for your encouragement and support during this 28 day challenge 🙏😃 I love the 15 minute HITT Workout! I'm not in the challenge group but I have been working out every day any where from chair exercises to shorter stand up exercises since New Years. Completed day 19 along with a 20 minute cardio workout. My husband is so proud that I can put a 10 lb bag of sugar on the second shelf without a step stool. I couldn't do that 2 weeks ago. ☺️ Day 13 : WOW! The music was so great that I did the workout twice. And felt I did better on the second round. Finished doing a 15 minute calming breath workout. For all of you in the midst of the winterstorm: Stay warm and stay safe🥰 I discovered my true authentic self. even when I’m a hundred years old, I’ll remember this lovely woman who so completely saved my life in more ways than one I like it when she's talking during the workout she's always reminding us to hold in our core and she is so inspirational I like it when she's talking during the workout because she reminds you to hold your core or squeeze your gluts, because I’ll forget those when trying to do whatever move we’re on. Plus she is so inspirational!

If you're looking for a fitness coach who doesn't do everything at maximum speed, at maximum volume yelling go! go! and making you feel like you're on a punishing bootcamp workout, then Fabulous 50s is the place to be! Schellea has a unique way, she doesn't spend her time telling you what she does, she encourages you to be you, and to do you. You can work her workouts hard, you can work them gentler, at your own level and build from there. I have scrolled so many different coaches, trying them... next... I have never used the same coach more than once (many don't last a couple of mins). Schellea is the exception, I have used her workouts everyday, without fail for almost two months now. She is getting me fit! And for the first time in my life, I not only enjoy exercise, I welcome it, and look forward to my daily workouts with Schellea. Fabulous 50s is the right way to go 💪
