Roasted Chicken Apple Kale Salad Recipe

This high-protein roasted chicken apple kale salad is a mix of my culinary skills and knowledge of nutrition.

This recipe was carefully put together and is based on old ways of balancing flavors and textures to make a satisfying meal. 

I took the simple idea of a salad and made it a weight-loss powerhouse. Putting together roasted chicken, fresh kale, and apples, which are naturally sweet, is a great way to honor old cooking tips. 

This Roasted Chicken Apple Kale Salad is a quick and easy recipe to put together, requiring just 10 minutes of prep time and 30 minutes of cooking time.

In a total of 40 minutes, you’ll have a delicious and nutritious, high-protein salad ready to enjoy. It’s perfect for a satisfying and healthy meal that doesn’t compromise on flavor or nutritional value.

Keep in mind that the actual times may vary depending on your cooking skills and kitchen efficiency. This recipe is quick and easy, making it healthy and convenient for busy people.

Ingredients

  • 1 small Yellow Onion, diced
  • 1 small Apple, diced
  • 1 cup Butternut Squash, frozen and cubed
  • 1 tablespoon fresh Thyme, chopped
  • 3 tablespoons Extra Virgin Olive Oil, divided
  • 1 lb Chicken Breast
  • 4 cups Kale Leaves, thinly sliced
  • 2 tablespoons Apple Cider Vinegar
  • Sea Salt, to taste

Directions

  1. Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss together the diced onion, apple, frozen butternut squash, chopped thyme, and half of the Extra Virgin Olive Oil. Spread this mixture onto the prepared baking sheet.
  3. Place the chicken breast on the baking sheet with the vegetable mixture. Season everything with salt.
  4. Bake for 30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are cooked through with a golden hue.
  5. While the chicken and vegetables are roasting, in a large bowl, toss together the thinly sliced kale, apple cider vinegar, and the remaining extra virgin olive oil.
  6. Once the chicken and vegetables are done, slice the chicken breast into thin strips.
  7. Combine the sliced chicken with the roasted vegetables in the large bowl with the kale. Toss everything together until well mixed.
  8. Serve the salad immediately, enjoying the warm, roasted flavors. Optionally, you can refrigerate the salad in a resealable container for up to 3 days.

Additional Tips:

  • One serving is equivalent to approximately three cups of salad.
  • For an autumn-inspired twist, swap out fresh thyme with sage.
  • Boost the nutritional value by topping the salad with hemp seeds before serving.
